This panini recipe is easy to make and even easier to devour! Mix up the veggies to make it your own, and try it with Pesto Vegenaise too to add extra Italian flavor. If you don’t have a panini press, just use two heavy pans with the sandwich in the middle and a heavy can or two on top to provide some pressure. To roast a red bell pepper yourself, just hold it with tongs (or set over a grate) over an open flame, turning from time to time, until blackened and blistered on all sides.
