Cheesy Ranch Potato Bake

This dish pulls out all the stops and leaves no way they could ever be put back in again. It’s creamy and rich, with all kinds of savory flavor and ooey gooey goodness. Bring it to your next potluck and show everyone that vegans know how to get down, too. Add some vegetarian bacon pieces to the cheese and ranch before its final bake step to push this side over the top!


4 lb
red potatoes, cut into 1/2-3/4″ cubes
1 tsp
Chili Powder
1 tsp
seasoned salt
1/2 tsp
Cracked Black Pepper
1/4 c
non-hydrogenated vegan margarine
1/2 c
finely chopped red onion
1 10- oz
package Vegan Gourmet® Cheddar Cheese Alternative

Preheat oven to 400* F. Place cubed potatoes into a 9×13” baking dish. Sautee onions in margarine until translucent and beginning to caramelize, then add chili powder, seasoned salt and black pepper. Carefully drizzle this mixture over potatoes and stir to combine. Cover with foil and bake for one hour, until potatoes are fork tender.

Remove dish from oven and carefully peel off foil (steam will escape, so aim this away from your face). Add cheese and ranch to potatoes and stir well to combine, then turn oven up to 450* F. Return dish to oven and bake for 7-10 minutes until bubbly and browned.
