Pesto Pasta Salad

This is a delicious and fun update on traditional pasta salad with the decadently fresh basil flavor of Pesto Vegenaise Gourmet. The tomatoes help bring a splash of color and this salad is a great way to get your daily dose of greens.
- 1 lb
- small pasta of your choice (rotelle, shells, etc.)
- 10 oz
- frozen spinach, thawed and pressed of excess water
- 16 oz
- frozen peas, thawed, rinsed and drained
- 1 pint
- cherry or grape tomatoes, halved
- 1 c
- Pesto Vegenaise Gourmet
- ½ tsp
- ½ tsp
Cook noodles according to package instructions. Rinse with cold water, drain and let cool to room temperature. In a bowl, mix together spinach, peas, Pesto Vegenaise Gourmet, salt, and pepper. Add pasta and halved tomatoes and serve immediately or refrigerate until ready to use.
